Ladybird cupcakes

I hadn’t really intended to do any baking, but I was at home with my kids and my son was asking if we could bake something. So after having a hunt through one of my recipe books, I found a couple of things I had the ingredients for. I asked my son which he would prefer to make, and he chose ladybird cupcakes. I was worried he had picked them because of the red ladybirds (red being his favourite colour) The only thing I didn’t have was red icing (although I had a myriad of other colours to use up). I warned him this was the case, and he didn’t seem to mind.

The cakes themselves were incredibly easy to make – just your bog standard vanilla fairy cakes. The icing wasn’t too tough either – good news for us, as my son is only three. In order to make the ladybirds, we cut out circles of skin-coloured icing and fixed them to the top of the cake. Then we used chocolate-brown icing to make heads and the spots (by squishing small balls flat), and the tails (by rolling small pieces into tubes). We used tiny pieces of white icing for the mouths, and I happened to have some of those tiny necklace sweeties hanging around, which made great eyes.

Not a difficult bake, but the end result was pretty effective. And if you have a fairly patient and willing three-year-old, this is one they can help with!

Candy cakes

Candy cakes allAnother incredibly simple recipe which I made with a newborn baby in the house. The main purpose of these cakes was to use up sweeties that we’d used to create a train cake we made for hubby’s birthday (and to keep our toddler amused when there was a lot of attention focused on the newborn).

The actual cakes are just plain vanilla fairy cakes. The topping was chocolate buttercream, and I then added colourful sweeties (Smarties and jellybeans, because that was what we had left over).

A really easy bake which took all of 30 minutes from start to finish, and doesn’t look too bad when finished!

Annabel’s no-bake train cake

And so, the piece de resistance – a birthday cake that a 2-year old will love. As the title suggests, this cake actually required very little baking. This was a choice I made for two reasons; I recently made a work-intensive cake (see my baby in a pram party cake), and as I have already mentioned, my son isn’t a huge cake lover. What he does love, however, are chocolate fingers and biscuits. And trains. He really, really loves trains. That made this cake the perfect choice for him and me.

The idea behind this cake is that you buy a whole load of food that you wouldn’t normally let your child eat (chocolate fingers, chocolate swiss rolls, sweeties, jammy dodgers, chocolate Matchmakers etc), that put them together in order to form the shape of a train. It actually works really, really well – and took less than an hour to do, which I wasn’t expecting at all. We’d given ourselves a whole evening to put it together. The only things I did make were some chocolate buttercream (so that the sweeties and biscuits stuck on to the carriages), and I melted some chocolate to coat the engine. The latter wouldn’t have been necessary if we’d bought chocolate-coated swiss rolls, but we hadn’t.

The reaction from our son, and other guests alike, was totally worth it. Everybody was impressed beyond the effort that had gone in to creating the cake. Plus, you can make the train any length you like, meaning it can feed as many – or as few- guests as you want it to. Needless to say, we made way too much.
