Frittata

Another easy-to-make recipe from my Hallelujah! Easter cookbook, this is basically scrambled egg with added ingredients. I made it for lunch when just my hubby and I were home one day. Whilst it was simple to make, I wouldn’t have necessarily thought of adding the ingredients suggested, so it was a good recipe to try out. It would also make a good future lunch if you were feeling a bit peckish!

The longest, and hardest, part of this recipe is boiling a potato before you start (just one small one between two of you). Frying bacon and potato for frittataOf course, if you have one left over from a previous meal this step is much easier! You then fry up the (cut up) potato and some bacon before adding beaten egg, mixed herbs and milk. I actually made two frittatas because Dan doesn’t eat meat and I don’t like tomatoes, so we probably had more food (2 eggs each) than was really intended.

Once the egg is half cooked (which happens quite fast), I added some sweetcorn, tomatoes to Dan’s frittata, and some grated cheese. By the time that was all added and stirred in the eggs were cooked and the meal was ready. Other than boiling the potato, the whole thing took about 10 minutes to put together.

Frittata cookingDefinitely a lunch-time meal I’d make again, and I wouldn’t need to use the recipe to do it. I wouldn’t have thought of adding potatoes and sweetcorn to this, but both were pretty tasty additions. Although if you’re pressed for time I would suggest only adding potato if you already have some cooked. Otherwise just pop it all on a slice of toast!

Trinity Cake

Trinity cake with slice cut out from aboveI specifically hadn’t planned to bake much in the near future, knowing that soon there would be a new baby in the house. But this baby is taking their time, so I’ve found myself with a fair bit of spare time. So, on Pancake Day, I was hunting through a Hallelujah! Easter recipe book to remind myself of the amounts needed for pancake ingredients. As I flicked through the book, I realised that a lot of the recipes were pretty simple and used ingredients we already had lying around the house. So I figured it was a good book to use to make relatively easy, simple-to-find-ingredients-for-recipes until this late baby made an appearance.

The first thing I made was the Trinity Cake. I have made this before, but it was a couple of years ago. It’s actually a super-easy cake to make, but made a bit more complex by the fact that each layer is flavoured slightly differently. So there is a vanilla sponge layer, a chocolate sponge layer and a coffee sponge layer. Each layer is sandwiched together with buttercream, and then the top is simply dusted with icing sugar. The only time-consuming element is mixing together 3 different sponge cakes instead of one.

One thing worth mentioning is that the recipe suggests using three 7in round sandwich tins. I used three 6in square sandwich tins – simply because that’s the type of tin I had three of, and I couldn’t be bothered to cook each layer in the oven separately. It turns out that this was the right choice; there was only just enough mixture to cover the bottom of my 6in square tins. It turned out fine, but if you did want to use 7in tins you should probably make more mixture than the recipe suggests (which is 50g of each basic sponge ingredient plus one egg).

For a quick and easy weekend cake, it’s fine – but it’s not very exciting. The flavourings are pretty mellow (although I guess it would be easy to add extra coffee or chocolate for a stronger taste), and it is, when you think about it, just a basic sponge cake. I’m not sure it’s something I would choose to make for a special occasion like Easter though (unless you really are a novice baker).

Strawberries and cream cheesecake

Strawberries and cream cheesecake slice CUI haven’t done a lot of baking recently, but Valentines Day is generally an excuse for tasty cake in our house – and baked cheesecake is hubby’s favourite, so that’s what I made. Buying the ingredients and preparing the cake was, by necessity, all last minute – with a new baby due to arrive any day I didn’t want a bunch of ingredients sitting around in the fridge not being used because I was otherwise occupied. Luckily for hubby, baby did not make an appearance on Friday 13th.

This is a fairly easy cheesecake to make, although there are a few stages to it. For starters, you do the standard ‘melt butter/ bash up biscuits/ mix together and put in the fridge to set’.

Stage 2 is making the actual cheesecake mixture. Again, fairly simple – just mix together 600g cream cheese, an egg and 100g caster sugar. What you do need to do is add a boiled strawberry mixture to this. The strawberry mixture contains (funnily enough) 200g strawberries, 80g caster sugar and 30ml water. (Having said that, this nearly ended up being a cherry mixture because the first shop I went to had no strawberries. It probably would have worked, but I’m glad I found strawberries in the next shop because I don’t like messing up gift bakes)!  You boil all this together and then wait for the strawberries to go soft and the liquid to reduce by half. Once the strawberry mix is cool, add it to the cream cheese mixture. Then pour the whole shebang on top of the biscuit base and bake in the oven for about 30 mins on 160C.

Third stage: once the cheesecake is cool and has been in the fridge for a couple of hours, whip together 100g of mascarpone cheese and 20g of icing sugar. Then add in 100ml of whipped double cream, and cover the whole cheesecake with this topping. Pop it back in the fridge to set overnight.

Finally, decorate the cheesecake with strawberries (and, if you’re me and bought them in anticipation of having no strawberries, cherries as well). I was planning on writing out ‘LOVE’ in the middle of the cake because it was Valentines Day, but that didn’t really fit – so I went with a ring of chopped strawberries around the edge and the outline of a heart done with cherries in the middle. Although you could just chop and throw I guess! The end result wasn’t bad – it looks OK and between the two of us we’ve managed to eat almost the entire thing (it fitted in a 9 inch based tin) in about 4 days…
