Raspberry Cheesecake

We were walking past a  fruit and veg store and I said I fancied some raspberries.  Anna was quick to point out that they would go well in a cheesecake.  So we had to go buy some cream cheese…

Mmm, cheesecake.

Since we had to guess what we’d need, we bought a pot of cream cheese and some double cream.  Then looking for recipes later we noticed that they all needed soured cream and way more cream cheese than we had – thankfully it turns out you can make something very like soured cream from double cream by adding lemon juice (1/2 tablespoon per 150g approximately).  But there is no solution to using less cream cheese other than making less cheesecake, so we halved the mixture, causing something of a bother since the cake tin was the same size.  In the end we did the same amount of base, as many recipes woefully underestimate the amount of base.  Sadly not this one and you can see what a generous biscuit base we have from the photo!

Taste wise this is good but nothing special, for a home-made cheesecake.  You will struggle to buy one that tastes better (overlooking the oversized base we have, which does make it a bit biscuity) but I’ve had better home-mades.  Saying that, with some ice cream the base problem will go away, and they usually taste more flavoursome after a couple of days in the fridge so my fingers are still crossed!
